Ingredients

1 cup Yam thinly sliced into squares –
to fry Coconut Oil –
to taste Salt –
to taste Kashmiri Chilli powder –
Curry leaves -a stalk
cloves – 2 Garlic
pinch Turmeric – fat

Steps

  1. Boil about 4cups of water and add the sliced yam with salt, pinch of turmeric, fat pinch of chilli powder and couple of cloves of garlic sliced. Cover with lid for 3-4minutes until it’s half cooked. Drain in a colander. Set aside
  2. Heat enough oil(coconut oil preferably) in a frying pan to deep fry the yam slices. Do this in couple of batches so they cook evenly and better and also depending on the size of the pan. Fry the half cooked yam on medium heat until golden and quickly add the curry leaves and fry for couple of seconds. Remove with slotted spoon.
  3. Add Kashmiri chilli powder, salt and a tiniest pinch of fennel powder(optional) while still hot. Give it all a good toss to coat the yam.
  4. Serve with rice and curry of choice. Yum
