Lady'sfinger stir fry: An easy vegetarian side dish for lunch.
200 gm Lady ‘ sfinger (okra) sliced lengthwise –
7 Shallots –
clove – 1 Garlic small
1 Curryleaves – stalk
1 tbsp Coconut oil –
1/4 tsp Mustard seeds –
2 Green chillies –
to taste Salt –
pinch Turmeric powder – a
- Heat oil in a frying pan and crackle the mustard seeds. Add the chopped shallots, green chillies, slivered garlic and curry leaves and saute with a pinch of salt until softened.
- Add the sliced okra and a small pinch of turmeric powder and stir fry. Season with salt. Stir fry on high for couple of minutes and then put a lid on and cook on low to medium heat for another couple of minutes. Remove lid and continue to saute until done. Sprinkle a wee pinch of pepper if you like. Drizzle a little coconut oil if you like.
- Serve with rice and curry.
